Liberty owners will reopen former Sarrasin’s restaurant

PENN YAN—Susan and Cecil Huber, current owners of the Liberty Restaurant in Penn Yan, are planning to open a new restaurant at the former Sarrasin’s site at 301 Lake St. called Top of the Lake. Susan Huber said they are in the process of cleaning up the building and are hoping to open in December. Huber said she did not have a firm date set for opening, as the restaurant is still waiting for their liquor license.
Huber said she is not sure what the hours will be in the winter, but plans to have Top of the Lake open full time in the summer. She said the Liberty Restaurant was getting too small to handle the crowd during the summer, with some wait times being as long as 45 minutes. She said they had been looking for another place for awhile to accommodate the lack of available space. Huber said they plan to use Top of the Lake as a location for lunches, dinners and parties.
“We had a pretty good opportunity with Chris Iversen building the Hampton Hotel,” Huber said. “We selected the site because it was on the lake and because of the hotel going in nearby.”
Huber said the hotel should bring in additional customers, as the Hampton Inn will only offer continental breakfast and those attending meetings there may want somewhere to eat nearby. She said while she is not sure about the hours of operation, she will be bringing over current Liberty Chef Dwayne “Gilligan” Dickinson along with the Liberty menu to Top of the Lake.
As for the Liberty Restaurant, Huber said it will remain open, but will be converted into a sports bar.
